People throughout the DPRK are now busy preparing kimchi for the winter.  

Housewives meet to try each other's spices for kimchi and comment on them. They also compete with each other to make more delicious kimchi.

In this season, the friendly sentiments between neighbors are deepened and the laughter of people reverberates at every house and village.

The whole cabbage kimchi is made by pickling cabbages, washing them, putting spice consisting of red pepper, onions, garlic, ginger, etc. and fish, pickles, etc. between the leaves of cabbages, and fermenting them. This is our people's traditional side dish indispensable to their diet.

There are some regional differences in ingredients and recipes for making kimchi.

The inhabitants in the northwestern part of the country would make watery flat whole cabbage kimchi. Those in the northern part use less red pepper, onions, garlic and salt and those in the southern part make hot and salted kimchi with more pickle and spice.
